During the dark days (and nights) of COVID we decided that we would experiment with friend and Chef, Urs to creating some of our own infusions. It was a good excuse for trying out some new gins. The idea of the Gin Lab is to create new recipe ideas, which might one day become a new limited edition for Baleia.
Each month chef Urs and Ali create new flavours to try. Examples include Orange and chocolate, chocolate and chilli, rhubarb and ginger and even chocolate and bacon!
