Here in the Azores we like to make gin and tonics. In spring to the beginning of summer, the Azores has some of the best strawberries you’ll find. These seasonal fruits make for a great infusion with our house gin, Rocha Negra. The sweet flavours of the strawberry mix with the traditional bitterness of the gin and tonic that is added to the mix. Finally, we finish with a sprig of mint and pineapple sage to complete the drink.
