Join chef Joana for a sushi dinner. Locally born Joana is considered the best sushi chef in the Azores. She will introduce you to the sushi on offer. She personally collects the fish as the boats come into the port of Rabo de Peixe.

Join Chef Joana for an unforgettable sushi experience served in our exclusive, invitation-only speakeasy, Senhor Raposa’s Secret Drinking Den. Considered the best sushi chef on São Miguel, Chef Joana will impress you with her unique and exquisite approach to sushi, blending typical Azorean flavours with sustainable fish from the local waters. Our omakase-style dinner means you put your trust in Chef Joana to handpick the freshest seasonal products to create delicious and artistic dishes. Vegetarian and vegan options are available upon request at the time of booking.
Chef Joana was born and raised on São Miguel, and has grown up around fishermen and the fish they catch from the Atlantic Ocean surrounding the island. As a young adult, she discovered her passion for using this fish to create sushi.
Senhor Raposa’s Secret Drinking Den and The Solar Branco Eco Estate are strictly for adults only, babies and children under 16 are not allowed entry. PLEASE NOTE: Chef Joana will serve and explain the sushi at 7pm promptly to all diners. We ask that you arrive on time.
Zero food waste
We aim to reduce all our leftovers from the cooking to the plate. And thanks to our residents of Cluckingham Palace we get close to zero food waste. Chickens are amazing, they eat up all the scraps and food that would go to waste.

Our eggs come to you from our free-range chickens, our vegetables grown on the estate or by neighbors. We want you to enjoy the best local produce the island has to offer.
