Homemade Sausages Cooked in a Volcano

Coming to the Azores is all about connecting with nature. And enjoying some of the unique experiences that these islands have to offer. One of the most unique and exciting things to enjoy is the Cozido das Furnas – a meal cooked in a volcano.
With this unique experience you will be preparing and eating Solar Branco’s signature, modern Azorean version of cozido, a delicious and refined twist on the traditional dish.
Your experience starts in the morning by making your very own sausages, guided by Mrs B, and preparing your pot with additional ingredients. You’ll then go to the cooking site. Be warned, the smell of sulphur as you drive in is a little overwhelming! At the site you put your pot into the ground and leave it there, for at least 6 hours. Thanks to the volcanic heat, the pot is kept naturally at a temperature of 80 to 90 degrees Celsius. You can then stay in the area for a hike or sightseeing, or return to Solar Branco. Around 18:00 you’ll be taken back to pick up the pot and return to Solar Branco to enjoy this unique food with some local wines, carefully selected by Ali.
Guests usually enjoy this food on the veranda as you watch the sun go down over the hills and ocean beyond.
